The Art of Tart
A Masterclass by Gareth Whitton
This hands-on class will introduce participants to the fundamentals of tart making, with a focus on technique, flavour balance, and structure. Together, we’ll work through the process of creating a versatile shortcrust pastry, while also exploring the science and key technical details behind it.
From there, we’ll build a series of sweet and savoury tarts, covering core fillings and components, as well as methods for assembly and finishing. The class will prioritise preparing a savoury tart for a shared lunch, followed by the creation of sweet tarts to finish.
- Savoury shortcrust pastry
- Mushroom & parmesan porridge tart with chilli crisp (served for lunch)
- Lemon meringue tart (adapted for a class setting)
- Banoffee tart with coffee caramel and white chocolate cream
